Well, this is a dish that I experimented. I love foods that are cooked in coconut milk. This time I used it with chicken. And the twist is, I also added 'alamang' or shrimp paste. Jump for the recipe below.
Cooking Instruction for Ginataan na Manok with Shrimp Paste (Alamang)
1 kilo chicken breast skinned and debone and cut in cubes
Grated meat from 1 pc brown coconut
2 tbsp shrimp paste
1 medium size garlic minced
1 medium size onion minced
2 pcs chili minced
1 tbsp cooking oil
How to Cook:
- Add water to grated coconut and squeeze to get the milk (use cheese cloth or just bare hands) Set aside.
- Heat pan and add oil
- Saute onion, garlic and shrimp paste
- Pour in coconut milk
- When starts to boil, add the chicken
- Keep it boiling in low heat until chicken becomes tender. Stir occasionally.
- Add the chili
