Igado is a pork recipe. And although I'm not really a big fan of pork meat, I cook and eat it once in a while choosing only the lean parts of the pork. There are different variations of Igado and this is my own version. And my first time too.
Instructions for Igado
Ingredients:
1/2 kilo lean pork meat (sliced in thin strips)
1/4 kilo pork liver (sliced in thin strips)
1 small pack tomato sauce
1 medium size red bell pepper
1/2 can green peas
1 medium size onion
5 cloves garlic
1 tsp ground black pepper
1 tbsp cooking oil
1 tsp brown sugar
1 tsp salt or fish sauce
How to cook:
- In a frying pan, heat oil and saute onion and garlic
- Add pork meat and stir until it turns brown
- Add tomato sauce. If necessary, add a little water
- Simmer until meat is tender
- Add the pork liver and simmer for 5 minutes
- Add brown sugar and salt or fish sauce to taste
- Add the green peas, red bell pepper and ground black pepper
Serving size: 4-6
