Chicken Afritada

Now I really don't know if I should call this chicken afritada or something else. I sort of just experimented on it.  Anyway, my son who is picky gave a thumb up for it.  Try it yourself too!

Cooking Instruction for Chicken Afritada


1 kilo chicken thighs or any cut of your choice
1 tbsp cooking oil
2 pcs medium potato quartered
2 pcs medium carrot sliced
1 pc small red bell pepper quartered
1 small can pineapple chunks; save the juice
1/2 tsp whole black pepper
2 pcs tomato
tomato sauce
1 pc medium onion minced
5 cloves garlic minced

How To Cook:

  1. Fry potatoes; set aside
  2. Saute onion, garlic and tomatoes
  3. Add chicken; stir
  4. Add pineapple juice and tomato sauce; bring to boil and simmer until chicken becomes tender
  5. Add the potatoes, carrots, bell pepper, black pepper and pineapple chunks; simmer for 5 minutes
If desired, add salt or fish sauce to taste.

Serving size: 4-6
